Indian Cooking is so different from other cuisines in that there is not one style used for all dishes. The taste of each dish depends on the region it originated in.

Indian cooking is considered one of the most diverse cuisines in the world. With the traditional use of varied spices and ingredients, Indian food is not always instantly recognizable as Indian because of the number of influences that have made an impact on the way Indians cook.

India is a country that has several other races and cultures coursing through its veins. Because of this, their cuisine has been molded by immigrants from West and Central Asia, colonizers from European countries, as well as the spread of religions such as Hinduism, Islam and Buddhism. The variations in India’s topography has also led to major differences in the cooking done at several of its regions.

One common factor in all kinds of Indian food is the use of pulses. Pulses are leguminous plants that bear one to twelve grains or seeds within a pod. Some common pulses used in Indian cuisine are masoor, chana and mung. Another common part of Indian food is rice or whole wheat flour.

Goda Masala is also a commonly used spice mix in Maharashtra. Indian food also utilizes leaves such as curry leaves, cassia leaves, coriander leaves, mint leaves and fenugreek leaves. Nutmeg, cardamom, saffron and rose petal essence are often used in the making of Indian desserts or sweets.

North Indian cuisine is distinctive by the high dairy content in its dishes. Their dishes often include milk, yoghurt, an unaged acid-set farmer cheese called paneer and a clarified butter called ghee. North Indian cooking also often centers on the use of a “tawa” or griddle for making flat breads as well as tandoor, which is a large and cylindrical oven that uses coal. Some popular North Indian dishes are samosas, which is a triangular pastry filled with spices and vegetables. Another one is Tandoori Chicken, which uses yoghurt and tandoori masala.

The eastern region of India is known for sweets and desserts like chumchum, rasagolla, chhena poda, chhena gaja, rasabali, sandesh and kheeri. Poppy seeds are also a common ingredient in Eastern Indian food.

South India focuses on rice as the centerpiece of meals. Common ingredients are curry leaves, coconuts and coconut oil. They are also known for a pea and vegetable stew called sambar and a soup made of tamarind or tomato called rasam. The cooking is so varied in the Southern states that each area has its own version of cooking sambar.

West India is known for dishes that use rice, coconut, as well as fish found in the sea. Areas that are located in the hilly locations often use groundnut, wheat, jowar and Bajiri for their food. Those villages near the coast often eat fish, coconuts and rice.

If it can be cooked inside on the stove or in the oven it can also be grilled outdoors. Granted a few changes must be made, but it is definitely possible. For many that have always cooked their steak by broiling or frying they never realize the true flavor and taste of a grilled steak. There is nothing any better, well that is unless you have grilled the veggies to go along with the meal. Steaks, hamburgers, hotdogs, pork chops, vegetables and fish are just a few to name that can be prepared on the grill for a perfect meal. There are many recipes that can be found on the internet and in cookbooks that give great recipes for outdoor grilling.

Preparing The Meat

One of the secrets to outdoor grilling is the preparation of the meat beforehand. Though the actual cook time is generally shorter in this manner of preparation the marinating can be time consuming. It is not difficult to marinate the meat and/or vegetables, but sometimes the recipe may call for a twenty-four or forty-eight hour marinating process. All marinating means is soaking the meat and vegetables in a prepared sauce of seasoning and other ingredients that will tenderize as well as flavor the meat. By sitting in this mixture it allows the meat to absorb the flavor and taste wonderful after hitting the grill. There are several types of marinade and some cooks even devise their own seasoning depending on the type of meat that they are preparing! Flare ups are something that must be addressed in grilling food also. Flare-ups happen with liquid such as grease or the marinade sauce drips onto the open flame, causing the fire to “flare up”. This can be avoided by draining the marinade or purchasing the better cut of beef with less fat. Every precaution should be taken to ensure the safety of the individual grilling the food. While flare-ups are unavoidable all together they can definitely be kept to a minimum.

Another thing to consider before grilling is to ensure that there is enough propane to finish the grilling session. Some grilling chefs will keep an extra propane bottle because of this. There is nothing anymore frustrating than getting half way through the grilling session and running out of propane! That is definitely the downside to grilling, but can easily be avoided with a bit of preparation.

How To Find New Mexican Food Restaurants

When the time comes to spend a night out on the town, chances are good you want the experience to be a good one. Knowing before hand where you will be going, how much money you will spend, and what to expect will go a long way in insuring your evening out with a loved one or a business partner is going to meet your expectations.

Finding a favorite, new Mexican food restaurant is not generally something you want to do for a special evening. That is why you will need to make preparations!

Exploring the new Mexican food restaurant down the street may be a great way to spend the afternoon. Stop in for lunch and really appreciate everything the establishment offers. Does the establishment meet with your expectations?

One of the things I always look for when I visit one of the new Mexican food restaurants is the quality of he chips. Personally, I like my tortilla chips warm, fresh, firm, and only lightly salted if salt is present. The chips are one of the first thing you will experience in this establishment. You should be pleased with the presentation, the number of tortilla chips, and the quality of the tortilla chips.

Are the chips broken, old, stale, cold, or overly salty? If my first experience with this establishment leaves me wanting a bag of store bought tortilla chips, something is definitely wrong. That is generally the first sign I may need to find someplace else for my next important dinner date.

The next thing is none other than the salsa. This is a personal preference. Some people like extremely hot and spicy, some people like something milder and with a hint of sweetness. Many establishments will offer you a choice between spicy or mild. If this is not offered, ask. You may be surprised.

One thing I look for in the salsa is the quality of the ingredients. Regardless of what the ingredients actually are, they should be firm, fresh, and taste good separately. Personally, I do not like running salsa, but my husband loves his runny as he can get it! It is all about personal choices. The restaurant will have their own type and style of salsa, but again, if you think the store bought salsa is heaven comparatively, you may need to step away from the table and skedaddle.

The service should be exceptional and polite with fresh water, chips, and salsa brought without a long period of waiting. In addition, you will want to insure that the ingredients are fresh, and that the meal arrives in a timely fashion. The meal itself should be hot, and having the wait staff remind you of the burn factor is a nice addition.

When it comes time to find a new Mexican food restaurant, you will find you have a lot of options to choose from. Sometimes, you will find something great that meets or exceeds your expectations, but other times, you may want to remind yourself not all meals come from a box. Good cuisine coupled with good service is always a welcomed relief, and if you appreciate lunch, your next dinner date will be a pleasure.
